Anchovy fillets macerated in vinaigrette, also known as anchovies (but differently prepared), are perhaps the most striking in pintxo bars in the Basque Country. The fillets are made with fresh anchovies and marinated in vinaigrette from the famous producer "Nardin", from Zumaia, Gipuzkoa, in the Basque Country.
