Salted anchovy fillets preserved in extra virgin olive oil. The bones and skin are removed by hand. After reaching the desired level of maturation, the anchovies are filleted one by one with a knife and are carefully packed by hand in olive oil. Conservas Ortiz thus achieves anchovies with a compact and intense flavour.
